On select nights the Surrell Pop-up comes alive and Chef Aaron Tekulve showcases his take on Modern American Cuisine using the very best Pacific Northwest products.  The dinners explore the terroir of the Pacific Northwest with most menus highlighting what is best in season in the two week period around the time of the dinner. During the year there are several single ingredient dinners where 1 ingredient is highlighted over 7 courses exploring it’s diversity and versatility. Some of the featured ingredients have been Tomatoes, Mushrooms, Beets, Squash and Citrus. Partnering with some of our fantastic Washington wineries such as Cairdeas Winery, Delille Cellars, JM Cellars and Mark Ryan Winery along with our amazing farms like Steel Wheel, Willowwood and Whistle Train Chef Aaron Tekulve and Surrell providesa unique, creative and delicious experience. JUNE 20tH THE LAST NIGHT OF SPRING TASTING MENU Experience!

Join us on this very special night as we enjoy the last tastes of spring and say goodbye for now. This will be a very intimate experience for only 8 guests at each of the two seatings that night. Along with the tasting menu a delicious Washington wine pairing will accompany it for those who may be interested.

  • Asparagus Ginger Soup, Fennel, Chevre, Marcona Almond

  • Olympic Peninsula Black Cod, Pea Brodo, Seabeans, Elderflowers

  • Pork Noodle, Spring Ramp Mojo Verde, Chicharrone

  • Wild Spring Mushrooms, Smoked Chicken skin, Egg Yolk Jam, Pork Jus

  • Squab, Smoked Cherries, Herb Salad with Pickled Shallots

  • Sweet Pea and Mint Ice, Lemon Cream, EVOO

  • Spiced Strawberries, Olive Oil Cake, Black Pepper Marshmallow, Basil, Tuile

*A vegetarian and pescatarian menu will both be offered in addition to this omnivore’s menu.
